- 10 fresh tiny mozzarella balls (available in the dairy/deli department of most supermarkets)

- 1/2 teaspoon of salt
- (1) 2 pound roasted spaghetti squash
- 3 garlic cloves, thinly sliced
- 2 tbsp of olive oil
- 1/2 teaspoon black pepper, freshly ground
To Make Marinara Sauce:
- 2 tbsp of olive oil
- 1/2 teaspoon of salt
- 1/2 cup chopped yellow onion
- 1/4 cup chopped basil
- Optional: 1/2 teaspoon crushed red pepper
- 1/2 teaspoon black pepper, freshly ground
- 5 – 6 minced garlic cloves (1) 32 oz can crushed tomatoes

To make the Mozzarella Stuffed Meatballs and Spaghetti Squash Marinara, these are some very important instructions that you have to follow while making it. For the Mozzarella Stuffed Meatballs:
- Preheat the oven to 375°F. Set aside a large baking sheet lined with parchment paper.
- In a large mixing bowl, add the beef, garlic, yellow onion, parsley, oregano, black pepper, salt, olive oil, tabasco, pepper flakes, egg, Worcestershire sauce, and cheese; mix well with your hands. create a 1/4 cup of the beef mixture into a round ball, then push your thumb deep into the center to create place for the mozzarella ball. Place the cheese in the center of the meatballs and pat them close with your hands, ensuring sure the cheese is well coated; move to the baking sheet. Repeat with the rest of the meat and cheese. Cook the meatballs for 25-28 minutes @ 350°F. Toss in marinara sauce and serve over spaghetti squash or with your favorite noodle/sauce combo once fully cooked. These make fantastic meatball sandwiches!
For the Spaghetti Squash:
- Allow spaghetti squash to cool after roasting. When the squash is cool enough to handle, shred it with a fork and transfer the “spaghetti” to a large mixing bowl; put aside.
- Warm the olive oil in a large pan over medium heat. Cook, stirring constantly, until the garlic is gently brown and aromatic. Stir in the spaghetti squash along with all of the garlic/oil from the pan, then return to the clean bowl.
For the Marinara Sauce:
- In a medium-sized saucepan, heat the olive oil over medium heat. Cook, stirring occasionally, for 10-12 minutes, or until the onion is tender and translucent, adding the onion & crushed red pepper. Cook until the garlic is fragrant, approximately 1-2 minutes, then add the smashed tomatoes, basil, salt, and pepper. Bring the sauce to a boil, then lower to a low heat and simmer for 15 minutes, uncovered. Season to taste, adding extra salt, pepper, and fresh basil as required.
- To serve, spoon a scoop of spaghetti squash onto each dish, then top with a couple meatballs and a liberal pour of marinara sauce. If preferred, top with extra Parmesan cheese and basil.
