- Preheat the oven to 350 degrees Fahrenheit. Brush the sides as well as bottom of a 913-inch baking pan with butter. Line the baking sheet with parchment paper.
- In a medium mixing bowl, combine the flour, salt, and cocoa powder.
- In a large mixing bowl, combine the chocolate, butter, and instant espresso powder and lay it over a pot of boiling water, stirring regularly, until both of the ingredients are fully melted and smooth.
- Remove the bowl from the heat, leaving it over the water, and add the sugars. Remove the bowl from the pan once it has been well mixed. The solution should be at room temperature.
- Whisk 3 eggs into the chocolate mixture until mixed. Whisk in the remaining eggs until well mixed. Stir in the vanilla extract until well mixed. Overbeating the mixture at this step will result in cakey brownies.
- Over the chocolate mixture, sprinkle the flour mixture. Fold the flour mixture into the chocolate with a rubber spatula (not a whisk) until just a little amount of the flour mixture is visible.
- Smooth the top of the mixture into the prepared pan. Bake for 30 minutes, turning the pan halfway through, or until a toothpick inserted into the middle of the brownies falls out with a few wet crumbs adhering to it. Allow the brownies to cool fully before removing them from the pan with the parchment paper. Serve cut into squares.
- For up to 3 days, store at ambient temperatures in a tightly sealed bag or wrap in plastic wrap.
